Soups, Salads and Vegetables

Hello, well here I go with a different adventure.  In December we had an eye opening episode with me not hubby.  The best thing about it is hubby thought he had not been to the doctor in years, he was tested and found out had Type 2 Diabetes.  I know nothing about it so have been reading and thought ok I can convert my recipes into food he can eat non cardboard food . Compatible food.

Here is a grouping of salads soups and vegetable  dishes.  I wanted to convert my recipes I have used for years into friendly ones for him.  I am not a professional anything and these recipes have worked for him wonderfully.  Please remember everyone is different in this battle of Diabetes.   In December  of 2019 his A1C was 8 and now last of March it is 5.3.   He is taking low dose of Metformin but  our goal after the Virus calms down our goal is diet only.  So we are in this battle together.  I cook and research and he eats it.  A good combo. 

He does not need to lose an ounce, no matter what I am doing he is still losing.  I am eating the same thing and you know what happens?  He is loosing and I am not.  lol

The first recipe is a Broccoli Salad he loved.  I have rearranged and deleted and made it still yummy and he can eat it.  I thought about putting the original recipe and then what I did to it but thought won't bore you with to many words.

 1 Bunch of Broccoli chopped
4 or so strips of cooked bacon chopped
1/2 to 1 cup of Sunflower seeds
I also added red bell pepper chopped for color
cubed cheese
I have to get as much goodies in there as I can

for the dressing I tried several things, suppose to use mayo but some say Mayo yes and some say no.  So I used light olive oil, some red wine vinegar and 1/4 cup of sweetener of your choice.  I used Swerve and probably will experiment more..I do that you know.  I need about 1/4 cup total of liquid for the dressing.  Pour this over the yummy green and pretty colored veggies and sprinkle the bacon on top before serving.

I have used the sweetener and 1/3 cup of Primal Kitchen Ranch with Avocado ( to me this was horrible but some may like it.) but like the dressing above better.  I did add a little red wine vinegar but nope the other is better to us.

                    This is not a diabetic recipe, nope not at all but just had to share it.  

Another treasure here in salads.  Now this one is full of sugar and goodies but man alive is it good.  I call it Rosalie's Salad. This awesome woman was so good to me growing up when I got to Seminole so just had to give her a title of a yummy salad.  She made sure I had a fancy smancy dress for a special party, one of my many memories of her. I would make this at Christmas for family get together.  Our Nieces and Nephew were always excited when we brought it.

                                                                Rosalie's Salad

1 Small Box of instant vanilla pudding
1 small can of pineapple chunks
1 can of apricots
1 can of mandarin oranges
3 bananas sliced
1/2 cup nuts

Dissolve instant pudding with juices of fruits Mix all fruits together with pudding and add nuts.   You many use strawberries when in season.   Refrigerate and serve.   Hummm good.

Now hubby like potatoes, don't we all?  I have never ever even seen a Rutabaga much less even thought about using one of the ugly things to eat.  Really!   Well sorry Mr. Rutabaga you are now redeemed and in our world .    One those suckers are heavy.... and hard as a rock.  So what is the deal with them?

I peeled it the best I could, stabbed it several times, not to hurt it but to let the steam out when I put in the microwave for 6 minutes.  It was then soft enough so I could use a knife on it to slice and dice without using a hammer or mallet to get the knife thru it.   Not kidding.   I sliced and diced it and in my wonderful iron skillet had some old fashioned bacon grease heated up ready to spread it's flavor into the diced up Rutabaga.   I added salt and pepper and a tad, always a tad, of cayenne pepper. Just a little bite to your tongue there.  Pretty good eating there and will respect it always.   It is kind of sweet but not, know what I mean?
