Deserts and goodies

Hello, now every diabetic is different on what they can eat.  Odd but we are learning.  One group I found Oatmeal is the kiss of death.  Then other places oatmeal in moderation is good for you the fiber and all.

Here is a grouping of desert type dishes.  Since hubby is now a diabetic I wanted to convert my recipes I have used for years into friendly ones for him.  I am not a professional anything and these recipes have worked for him wonderfully.  In December  of 2019 his A1C was 8 and now last of March 2020  it is 5.3.   He is taking low dose of Metformin but  our goal after the Virus calms down our goal is diet only.  So we are in this battle together.  I cook and research and he eats it.  A good combo.


Now remember I am not a dietitian or pro but know what I know.  After eating this yummy dish and waiting two hours to do a glcose test this was good for hubby to eat and didn't spike his numbers or anything.  So it is going on the list of non cardboard food to eat.  I liked it also.  I almost forgot to take this pic.  Just good, pure good.


I got this recipe from a sweet friend Nicki Seavy.  I am going to post as how I changed it for hubby's diet and put what the real recipe had in parentheses.  How is that?  I am calling it a cobbler.


                                                        Nicki's Blueberry Cobbler
350 degrees for 45 minutes

1/2 cup Swerve sweetener    ( 1/2 cup sugar)
I left this out of the dish   -- ( 1T.corn starch)
3 cups frozen blueberries, not sugared

Pour this into a greased 9 in pie pan or dish

1/4 cup Lakanto Monkfruit Sweetener GOLDEN        (1/4 cup brown sugar packed)
-----thinking of next time adding 1 t. maple flavoring. will keep you posted. ------
1 cup quick oats
1/2 cup coconut flour             ( 1/2 cup flour)
1/2 cup melted butter
1/2 cup chopped pecans
1/2 shredded unsweetened coconut

Mix together and put on top of blueberries

Bake and when semi cool top with whipped heavy cream about 1 cup and I added some Swerve confectioners sugar, a couple of teaspoons.  We just topped it when was dished out in the bow.  ( Nicki used ice cream or whipping cream or cool whip)

There you go, this was so good and on our permanent list .  Enjoy!!!
