This is an awesome roast, I have revamped for Diabetes friendly meal. So good and just have to share this with you. I have sort of renamed it sooooooooo here is a crock pot recipe that is so good. I originally got it from a Seminole Senior Citizen cookbook.
Crock pot Tex-Mex Roast
3 pound roast or I use just a big fat sirloin steak, not cut up just chunked in the crock pot
1 cup of mushrooms, fresh or canned whatever you have and sliced
1 can of Rotel tomatoes in the mild or if younger and like spicier hot or Original
1 cup of tomato sauce
salt and pepper to taste
1- 4 oz can of green chilies,chopped
Garlic powder to taste
1/4 cup sweetener of your choice ( I use Swerve ( and can use real sugar if want to if not diabetic)
2-3 cups of dried pinto beans ( now some say diabetics can have pinto beans and some say no)
enough water to cover roast/meat and beans
Mix all ingredients together and place in a crock pot. Cook til the meat is tender, longer on low about 4 hours on high.
Gravy:
After this is cooked and the house smells so good take the vegetables and meat and put in bowl or platter. I then use a lot of the liquid from the crock pot and put in a pot to make the gravy.
You may add corn starch or 1/2 to 3/4 teaspoon of xanthan gum to thicken your gravy. ( the xanthan gum is a thickener and I can never get it smooth but suppose to be better for diabetics, try a little of the hot liquid in a bowl and then sprinkle the x.gum in the liquid and whisk really fast, it will glob up on you.)
add 1/2 cup or maybe a little more heavy whip cream to this liquid.
Stir well and bring to a simmer.
Now if not diabetic some yummy corn bread would be wonderful as a side with this meal.

I have made this for a million years, well close to it. I am comfortable with it and I don't mix up the meats, just a plain, know it is good meatloaf. I have changed it so is diabetic friendly
Meatloaf
350 degrees
2 pounds 20/80 hamburger meat
3 eggs
1/2 cup of chopped green bell pepper ( or more)
1 8 oz. can of tomato sauce
Now I have subbed Rao's tomato basil sauce for the regular tomato sauce. Rao's is compliant for my diabetic this is to die for to me.
1/2 cup heavy cream
1/2 teaspoon pepper
1 teaspoon salt
3/4 3 ounce package of crushed pork skins-rinds ( diabetic friendly and makes good coating)
2 Tablespoons of coconut aminos instead of Worcestershire sauce
4 ounces of shredded cheese
Now if you want a bite to this recipe you can add some jalapeno peppers chopped or sometimes just a 4 oz can of chopped green chilies mild or hotter. Just a throw in note from Annette.
Mix the eggs, pork skins, bell pepper, cheese, heavy cream, salt and pepper.
Add the meat and mix. Try not to over mix the meat, maybe use your fingers like a pitch fork to mix it all up.
Now you can put in a 9x5 loaf pan or form in it a 13x9 dish but I just put in a cup cake pan for individual servings. There are just two of it and I freeze some it cooked and when I don't want to cook I have a meal for us. Now cook to 160 degrees inside and you are good to go. This makes several meals for us.
Glaze
3/4 cup of Heinz sugar free Ketchup
1 Tablespoon yellow mustard
Mix these well together.
Add 1 Teaspoon maple flavoring
2 teaspoons Swerve or sweetener of your choice.
This is really good over the meatloaf.
I don't have numbers or anything to go with the recipes, remember I am not a professional or anything like that but know what hubby likes and can eat. we know it does not taste like cardboard.

This recipe I got off of the internet but flat forgot to see who or where, so thank you whoever for posting it. This one is good and cheesy and with recipes like this I am getting hubby to eat chicken. They use to raise caged chicken eggs ( 3000 of them) and people loved them and as a teenager hubby delivered them to the grocery stores and went to school and they farmed cotton. I could tell you some stories about all of that. A busy family, but he didn't like chicken but he says it is ok now. They ate a lot of chicken and wonderful beef.
A painting I did of the egg house just before it was torn down. They even had a jar that people could put their money in when they were gone. The customers then helped themselves. Can't do that now days I bet. There was a big cooler in there, an egg grader and washer for the eggs to be clean and good.
Please remember all diabetics are not the same. We tested hubby and not a number one was out of sight. So we thought this is a good to go for him.
t. means teaspoon and T means tablespoon and c is cup. I guess this is old school maybe?
Chicken Broccoli Casserole
350 degrees 15 minutes
20 oz of broccoli florets ( I just put one of the crowns in that they sell at the grocery store )
8 oz. cream cheese
1/4 c. mayo
1 c. grated cheddar cheese
1 t. garlic powder
1/2 t. pepper
1/4 salt
2 c. cooked chopped chicken
1/4 c Parmesan cheese to sprinkle on top
Put broccoli in microwave bowl with 2 T water for two minutes. Then let sit for 2 minutes with plastic wrap over it or a lid. Drain the broccoli can go ahead and put in your baking dish if you want..
Add cream cheese, mayo, cheese, garlic powder, salt and pepper in small bowl and mix well together.
Stir the cream cheese mixture and chicken together.
I put the steamed broccoli in a 9x9 or 8x11 ( 2 quart) casserole dish. I lightly sprayed it just in case something wanted to stick. You know how that cheese does. Put the cream cheese/chicken mixture over the broccoli.
Sprinkle with the Parm. More if you want a more Parm cheese taste. Bake it and good to go.
